After a while it settles into a groove, pumping lemon, saline and fennel from a deep reservoir. When I first opened it there was this giant hole in the mid-palate. Over time it filled it, and gained weight and depth to spare. I suspect a couple of years in the cellar would make a lot of sense, maybe longer. Very dry, so use it like a trocken.
