Monday, August 14, 2023 - The wine needs air. So so much air. It’s so taut and acidic on the initial pour. The acidity is almost overwhelming initially. Then the wine starts to unfurl with each pour and with time in the glass. It starts to show a dense candied fruit note with ginger snaps and smoke, the flavor profile grows and starts to balance out the strong backbone of acidity. Brioche notes start to fill the mouth as it lends more warmth and width to the wine.

If you pop one of these I highly recommend a decant.
