Thursday, January 12, 2023 - A private dinner (Restaurant SAAM, Ouderkerk aan de Amstel, NL): Single vineyard on the granite Sinai hill overlooking False Bay, 100% Chenin Blanc, dry-farmed bush vines planted in 1978, whole bunch pressed, spontaneous fermentation and ageing for 12 months on the lees in 20hl foudres, followed by six months on the fine lees in tank, 13.45% ABV, 5116 bottles produced. Beautifully composed, expertly put together. Generous, elegant, precise, salty, creamy texture, bright acidity, lovely tension and energy, pure varietal flavours, calm and lingering finish.
