Saturday, November 13, 2021 - Initially extremely closed. Pulled cork tasted left upright in cellar for 4 hrs then 30 min in glass. The reward for waiting was a stunning wine, subtle complex structured with lingering finish. Wine seemed to gain body with air.
Nose: subtle spice, rose, cedar with dark red fruit as it developed
Initially smooth tannin and tea with raspberry or pomegranate which gave way to dark cherry and subtle hits of unsweetened cocoa powder as the wine came into its glory which lasted on the finish
This wine was reminiscent of a mature Bordeaux rather than a typical Napa cab in complex subtlety. Shared with friends over dinner with other great bottles but almost would have preferred to spend the evening just sipping and exploring the amazing bottle this was.
