Thursday, September 30, 2021 - Left this one a little long, but it was nonetheless interesting.

Deep amber color with a nose of dried apricots, honeycomb, and caramel.

Honey continues on the tongue with a ginger spice layered to it & some earthy notes that I can't pinpoint – perhaps chalk?

Acidity is faint, but it paired well with Japanese chestnut dumplings!
