Tuesday, December 27, 2022 - Leaner style with more aggressive acid. More sharp/crisp than full/round. Not-quite-ripe green apple with skin, lemon, quince, bread dough, and very light almond skin. Nice phenolic bitterness for a Champagne. Enjoyable, and not quite my personal style preference.
