Saturday, December 2, 2023 - straw colour and medium body in the glass. gooseberry and stonefruit in the nose with floral and minty (not grassy) whiffs. crisp and creamy feel in the mouth and with good acidic lift as the flavours unfold: fruity with herbal and citric accents. with time and warmth a vein of pink grapefruit pith gains in notoriety. long, fresh, mineral finish.

a round rather than nervy style of SB but with plenty of acidity and minerality to be fresh and zingy. drinking well already and with good upside potential over a handful of years for those of us who like this style.

13.5% AbV; fermentation in stainless; ageing on lees for ~7-8 months in stainless (80%) and large barrels (20%)
