Wednesday, September 7, 2011 - Popped and poured. 2008 disgorgement. Fine, persistent bead. Light yellow gold hue, a touch deeper than 17 months ago. Forward aromas of yeast, biscuits, apple dumpling, apple skin, hazelnut, and perhaps just a touch of oxidation, which evokes sherry. Light to medium-light body, with deceptive concentration. On the palate, this shows nice, somewhat complex flavors of apples, lemon zest, pear, subtle nutmeg/spice, and again, notes of yeasty biscuits. Off-dry, the sweetness gives additional perceived body, but, and probably due to the moderate level of acidity, this never comes off as ponderous and all the elements are nicely balanced. Because of all these combined factors, this might perhaps be a bottle of bubbles best enjoyed alone or with dessert as opposed to a main. No matter, good stuff in this bottle and one which really seems to have benefited from a few years' time in the cellar.
