Monday, December 10, 2012 - Rather pale yellow - a bit more developed color than that of a "regular" sparkling wine. Very rich, open and expressive nose with aromas of yellow apple, some developed pineapple character, a little butter, a hint of roasted nuttiness and a touch of dusty, chalky minerality. Dry, broad and creamy palate with layered flavors of remarkable depth: ripe citrus fruits, green apple, some baked apple, a little bready autolysis, almond paste, a hint of roasted nuts and a touch of tart red fruits like lingonberries or cranberries. Gentle, balanced acidity and very small, fine and creamy mousse. Very long and powerful finish with intense, mouth-cleansing minerality, some roasted nuts, a little ripe Granny Smith apple and a touch of developed yellow fruit character.

A great combination of youthful focus and brightness with power and depth of Pinot-driven fruit and great depth and complexity from the réserve wine. A rather big and heavy for an NV, but still remarkably balanced and refreshing for its size. Delicious stuff right now, but shows good potential for short-to-medium-term cellaring. One of the greatest big house NVs on the market and great value at 47,50€.
