Tuesday, January 22, 2019 - Great wines are so thought-provoking, and analogies to non-wine stuff come easy. This Raveneau expresses a purity of citrus and tart yellow apple fruit enrobed, no, cloaked in silky lemon cream. As a Greek American I kept thinking about avgo-lemeno soup which seems simple but is so hard to make WELL. There has to be a perfect balance of elements, savory depth of chicken stock, zingy fresh lemon acid, and rich creamy egg. Just like Chablis! Too much acid sour is unappealing, too much Oak is plodding and overpowering, too much malo or lees action and you lose the freshness of the fruit. So compellingly delicious.
