Palate entry has an excellent mineral quality with some glycerin, midpalate goes to very crisp apple, then turns creamy and brioche, with a very lingering finish of nuts, oak, and spice with a nice acidity cutting through it.

If you can, serve with dishes containing ginger, toasted nuts, lemongrass, etc. Had with asian style tuna tartare and hit it out of the park.
