Friday, December 24, 2021 - Been sitting on my last of three for quite some time. Decided to use a little bit in my Christmas Eve fish gravy and have the rest with the pasta/gravy. It went perfectly together. This evolved nicely over the years. Gone were the red cherries and funk that dominated it's youth. This was more layered flavors of balsamic, leather and ripe strawberry.
