Wednesday, January 1, 2020 - Poured ruby/rust. Deepened to dark red with 2 hour decant. Medium body, some red berries, cherry tartness along with some earthiness, herb, and minerality. Very nice with sous vide prome rib cut to 3 inch thickness and seared in wood burning oven.
