Thursday, December 31, 2020 - First sip was a little thin and underwhelming. I was afraid I picked the wrong week to open it as I've read the 2007's are still very temperamental. But after a good 2 hour decant it was what I had hoped, and it improved further in the glass. Very well-balanced fruit and secondary flavors developing. If you've stored yours properly there's no rush to drink up, but if you do in the short term, give it some air first.
