Friday, August 12, 2022 - Put upright for a few hours in my bedroom, then double decanted for 55 min and placed in the fridge for 30 min before leaving to Smith & Wollensky.

Started drinking about one hour later. The nose is sensational, flowers, coffee beans, like a warm breeze from the Pacific Ocean, the body is medium to full, mid palate is the best part, super complex, multidimensional with all those magic dark and sweet notes combined. Finish is medium to long, super plesant.

The only downside was it didn’t paired well with a Ribeye and truffle Mac&cheese, then I had a bite of my GF’s filet Mignon and didn’t go well either. So it doesn’t have the acidity needed to cut the fat.

This wine while excellent now on its own or lighter fares seems passing its prime time, still no rush, I’m sure it will be there for at least 3-5 years…
