Wednesday, January 10, 2018 - This is classic, pure, and delicious Chablis. I wish I could go back to the days when you could pick a wine like this up for $30!! The nose here is just pure Chablis, green apple, lime zest, sea breeze, iodine, oyster shell, and white floral notes. The palate has a zen-like balance with great depth and intensity through the mid-palate leaving a lingering sensation of taste and a longing for the next sip. Really, really good with crab cakes. Should hold for a few more years, but I think its pretty close to peak drinking right now. Wish I could get Valmur like this for $30-35 now a days...
