Sunday, May 1, 2022 - The last of a 3-bottle case purchased on release.

Pre-chilled in refrigerator and served from initial opening for about 75 minutes of full meal service. Color is medium bronze with plenty or medium-fine bead still present. Aromas in the apple/pear/berry/brioche end of the spectrum with some ginger lurking. Palate is initially sharp with ginger, cinnamon and apple notes. With about 10 minutes in the glass and a bit of warming, this harmonizes nicely and shows more pastry, lime, strawberry, and yellow plum notes. The finish is medium-long. This bottle seemed fresher than bottle 2, enjoyed 5 years earlier. I expect this to hold at this plateau for a long time and really like where it is now. The more tertiary/less fizzy old Champagne experience will eventually occur and this one is built for it if you are a fan. Drink (for me) or hold.
