Saturday, March 31, 2007 - At Pastis w Joshua, Jamie and Stephan. I had double decanted and areated this wine last week w Vinturi aerator, for dinner w Specarelli's (Never touched it, then.) Used Presevino to store it. Ellen has a glass mid-week,which I tasted, It was exceptional and optimal then, even better than the Seilan dinner at DUO.
Ellen loved it last night. I enjoyed it, but I didn't pair it well, Escargot, and then Calamari w Chorizo.
