Sunday, December 25, 2022 - Christmas Dinner with Pat & Alfio (At their apartment): One of the best bottles of this wine that we have enjoyed. Popped and allowed to slo-ox for 10 minutes. Lots of lively red fruits on both the nose and the palate -- a red berry mélange of strawberry, cherry and raspberry. There was a touch of citrus, the mousse was creamy and smooth, the acidity was lively and balancing and there was an overall fruity freshness in every sip. These are the elements of this wine that draw us in and make drinking it so enjoyable. Made from 100% Pinot Noir via the Saignee method.
A check of the cork showed that this bottle had been disgorged in the first quarter of 2021, making it the "freshest" bottle that we have experienced. I am happy that there is a movement to encourage Champagne producers to put the disgorgement date on the back label in the hopes of avoiding less than enjoyable drinking experiences.
