Sunday, March 3, 2024 - Red cherry, raspberry, pomegranate, ripe watermelon, tarragon, bread dough, and a whiff of baking spice. Slight tannins add structure. Acidity is lower and body is fuller than average. Deep color of shiny new copper penny and salmon color. Maceration method, 48-72 hours at 15C. 100% Pinot Noir. Stainless steel. Full MLF. 15-20% reserve wines of 1-2 years old. 5+ years on lees. 9 g/L. -Much from WSG Champagne class with Essi Avellan
