Wednesday, February 14, 2024 - Valentine's Day with Steve & Barbara (Their House): Disgorged in the 3rd quarter of 2019 based on the C91 printed on the neck of the cork.
As usual, we allowed this bottle to slo-ox for about 10 minutes which allowed the wine to "calm down" thus increasing the perception of red fruits and allowing the mousse to become creamier. The wine continued to improve and became one of the better bottles of this wine that we've enjoyed. The red fruits that we encountered on both the nose and palate -- a red berry mélange of strawberry, cherry and raspberry -- were lively. There was a touch of citrus, the mousse was creamy and smooth, and the acidity was lively and balancing. These are the elements of this wine that draw us in and make drinking it so enjoyable. We continue to consider this our go-to rosé champagne but remain concerned about the wide bottle variation that we, and others, seem to have been experiencing.
