Saturday, September 11, 2021 - Opened three hours ahead. Crispy shortbread, red berry sorbet, crisp red apple, and light minerality on the nose. Juicy strawberry and raspberry on the palette, amazingly pure. Then the sweet red apple and a little yeast. Lovely deep colour, the colour of wild keta salmon, rather than farmed salmon. The palette is thirst quenching. It’s a little richer for the bottle age, but the biggest difference to a current release is in the nose and the colour.
