Thursday, December 15, 2016 - Aged Rousseau dinner at Les Amis and off the wine list. Drank alongside the Beze 81 and Beze 82. What a fabulous treat, to drink a Rousseau Chambertin with 43 years of age. Bright red and limpid. Hardly any bricking which was quite amazing really. The nose was sensational - wild berries, new car leather, ginger spice, incense and white truffle. There was still a good deal of red fruit on the palate - grapefruit, cherries, sweetened strawberries. With extended time, the wine constantly changed in the glass, but at each moment, there was good fruit, acidity and differing notes of truffle, lavender, sandalwood, spice, earth, mocha and coffee cream. The elegance and subtleness of this wine was really something else and you had to really appreciate this timeless beauty quietly. Fantastic!
