I love a fino with a plate of green olives on a hot, stifling summer day, and for that you want a fresh fino. That's not this bottle. This bottle, while not as refreshing, has developed tremendous aromatics and complexity. It's got more body and it's also quite sensitive to serving temperature (I found the guidelines on the website useful). Terrific with food -- would love to have it with nigiri. I'm happy to enjoy fino with some bottle age.
