Monday, April 18, 2016 - This still needs about 1hr of air in a decanter (or 4-5hrs slow ox) but is in prime drinking stage although oxidation is starting. Nose of lychee, mango and (without air) lime. Colour has become pale gold. In the mouth there is lots of grape confectionary (the purple or slush puppy type) taste with some cinnamon. At the same time, lots of vibrant acidity. With lots of air this goes, but meanwhile it's very confected and not to everyone's liking - my wife couldn't stand it. Makes it more difficult to pair now with food. Tonight I tried it with butter and parmesan cod and it wouldn't match. Will have to try something with more garlic and oil - am thinking pasta genovese next. Drink up by 2018.

    7/6/2016 2:29:00 PM - Worked much better tonight with oily food (zitti pasta with spinach and garlic). Really does need the air - out the bottle this is all confectionary grape flavour.
