Sunday, March 8, 2015 - Served chilled, paired with mussels. Light pale gold. Nose of oyster shell, flint, white flowers, citrus, lots of granny apple. Initially voluptuous on the palate but with about an hour in the glass morphed to a more linear display of grapefruit, tart apple core, stern mineral spine, and white pear. Vibrant acidity and a long, tangy finish of citrus and schist. Lots of flavor in this one but also rooted in its sense of place.
