This has definitely lost the baby fat and now leans more toward the classic Chablis structure and interplay of minerality, soil, and lean, lemony fruit. Terrific length. A bottle last summer seemed a bit off and advanced; this one was just approaching prime drinkability and was exciting in its balance. This is one of those Dauvissat wines that seemed a little rich at first, but it has become much more sleek and focused over time.
