Wednesday, April 13, 2016 - Medium yellow. Airy, floral aromatics with some salinity and crisp citrus. Medium weight, nice glycerine texture. This has definitely lost the baby fat and now leans more toward the classic Chablis structure and interplay of minerality, soil, and lean, lemony fruit. Terrific length. A bottle last summer seemed a bit off and advanced; this one was just approaching prime drinkability and was exciting in its balance. This is one of those Dauvissat wines that seemed a little rich at first, but it has become much more sleek and focused over time.
