Friday, March 31, 2023 - Opened at the All-Star Dinner by Zachy's in HK. Served from Imperial, probably bottle-breathed in advance.

Still felt very primary - probably due to the format size - but showed some welcome development in the glass with air. Slightly green, crisp, saline, mineral and zesty - yet with a hint of creaminess that I find comes with top Sauvignon Blancs. Everything rounded together to form a beautiful and very well drinking wine.

Would be keen to see how this wine in a standard bottle format performs, and whether the evolution is much greater.
