Thursday, November 22, 2007 - Outstanding Turkey-Day treat. Decanted for 4+ hours, then enjoyed over the following 3 hours. Cellar was filled with fruit aromas when first decanted. Wine was certainly drinkable at that point, but extremely tight with chalky fine tanins. As the decant time wore on the wine integrated and opened considerably, while retaining awesome aromas and rich flavors. Dark cherries and bacon fat are among the more prominent of the many flavors. Glad I still have plenty of these.
