Friday, January 22, 2021 - Drinking beautifully here with a good pairing. We did bacon wrapped quail breasts and elote, which worked really well, which suggests some nice acidity to work with the fat. Here it has ample fruit and is beautifully balanced. No rush but hard to improve.
