Sunday, September 25, 2011 - Citrus and yeast aromas in evidence on the nose. Extremely fine mousse. Initially very forward on the palate, vibrant lemon sherbet somewhat masking the secondary flavours. Opened up a bit more after an hour or two revealing crisp red apple notes and a bit more weight. This stage in its life is obviously still favouring the fruit quite heavily, but delicious and vibrant nonetheless.
