Saturday, February 29, 2020 - Dinner at JB Ah Meng (JB Ah Meng, Geylang, Singapore): A very winous Champagne - this smelt almost like a rich white wine, with butter, cream and chalk, with toasted bread and rich apple fruit below. The palate was quite a bit more developed than the last bottle, but still very youthful, with bright lemony acidity and a firm mousse holding up rich, powerful, very Grand Dame flavours of red apples, bread and yeast, even a touch of white meat on it. Still a touch on the simple side, but there was a lot of power and authority to this, with a lovely push of length at the finish. A solid Champagne, if rather blocky and broad-shoulders. Starting to show well now, but this really needs a decade or more to really show its chops.
