Dans une belle fenêtre de dégustation, le vin est encore nerveux, fruit mi-sucré, mi-acidulé tout en présentant de belles notes d'élevage.

A Walk Through Simon Bize 1er Crus: This was probably my favorite of the night. When you first open it you get that Savigny earthiness. But a bit closed so the wine comes off as kind of empty.
After a few hours the wine has great lift. No longer a heavy Pinot also showing some minty green qualities that make it really refreshing. Worth the wait.

This had a glass poured off before a zoom tasting and drunk after. It is expressive and balanced with sour red cherries, raspberries, earth notes, spices, violets, and sweet tobacco. The Medium bodied feel shows off some youth as it’s immediate, yet balanced with crisp, medium+ acidity and refined, medium+ tannins. The structure still shows youth as there are some rough edges on the feel and tannins. This is right on the cusp of its window and it’ll easily develop for another 10+ years.

Two 2010 Savignys in a week, why not? This one showed even better than the Chandon de Briailles I had earlier in the week! Similar dark fruit, whole cluster spice, good body and acidity....this is why you drink burgundy.

Goodness Savigny is stout and reserved. Dark cherries, plums, blueberries, and soy. Even with the bottle open for 12 hours there is still a bit of CO2 tickle. There’s hints of tertiary notes but they won’t come into focus for a while. A stiff upper lipped blue blooded burgundy.

Brick, red, transparent color. Some signs of age, browning. Nose is really showing, with ripe red fruits, cherry, cranberry, and secondary notes of spice, earth, mushrooms, a touch of red liquorish. Palate is full of red fruits with strong acidity and integrated and soft tannins. Texture is smooth but not quite silky. Medium bodied. Great energy and medium alcohol. Wonderful length that goes on and on. Drinking great right now. May continue to develop but in such a good place now not sure I’d wait.

3rd Annual Gentlemens Dinner (Villa Ekenhov): Lovely transparent red. Detailed nose with clay, sour cherries, lingonberries and cranberries. Just hints of darker stuff as well. Good detail with baking spice, clove, five-spice and bay leaf. On the palate great energy with fresh acids, light tannin and silky red fruit. A bit tart, but not in a bad way - lends authority and stature and enhances the elegant expression. Good lenght with more clay, some iron and slowly fading fruit. Very nice. No hurry to drink this but feels open for buissness.

Bize is Savigny defined and his 2010s, while quite delicious on release, need a couple of more years to unfold their secondary complexity and to shed the high- toned bright red fruit tannins that still overwhelm many of these bottles. sophisticated for Savigny, tons of mineral backbone, red currant, lingonberry, bright cherry and much promise.

This is really, really impressive stuff, particularly if you're jonesing something in a classic whole-cluster style, as it features the spine and interior tension that makes for that satisfyingly succulent and robust style of Burgundy as opposed to the softer, elegant kind. It's got tough rawhide-leather tannins to go with it but such rich, succulent fruit that the structure doesn't dry the wine out. And it's total rock quarry of stony earth which complements those granular tannins nicely. Pretty dazzling complexity overall, there always seems to be something new and interesting peeking through.

A favorite producer, full, friendly, interesting Savigny's. Delicious and grapey with damp earth, a little spice, and some tannin and layered nuances. Good solo yet will hold up and pair with food too. Drink now or watch it evolve. Versatile.
