From a perfect looking bottle, this wine had a yellow center and clear rims. The medium+ intensity nose put forth citrus, mint (I usually get lemon oil in Ramonet but this time I definitely perceived mint), white stone, and vanilla.
In the mouth, this wine was powerful but with gorgeous balance and huge acidity. While very ripe and rich, it was still in balance. The length was very impressive.
This wine was drinking and would have easily lasted 5 years in the cellar. However, I see no reason to wait.

Tasted blind alongside what eventually turned out to be a Leflaive BBM from same vintage. Was initially very muted especially compared to the Leflaive’s aromatics which burst forth from the get go. However this beauty needed some air time and like the tortoise it eventually chased up and surpassed. Mint and menthol is what I primarily remember but just Wonderful.

Tasted blind, this wine had a light gold center with clear rims. The medium+ intensity nose generated gram cracker, lemon zest, honey, mineral, and eventually, some mint notes.
In the mouth, this wine was rip and rich with huge acidity and length. It got bigger and bigger in the glass despite being open a couple hours beforehand.
This wine is certainly fully mature. I can see why some might say that it shows some oxidative notes but for me they were more in the hazelnut, gram cracker, honey camp. Thus, I found this wine incredibly flavorful and impressive. Drink ASAP after a couple hours in a decanter and expect a lot of drama!

This was very mature/sherried, more than i expected and older than i like my whites, but still enjoyable. Sourced from auction, the fill was perfect and cork in excellent shape, but I’ll guess pristine bottles would drink younger

Zachys La Paulée Auction, Day Two (Le Bernardin Prive - New York NY): It has been many years since I have had this wine, so I was very excited given my overall adoration of everything Ramonet 1989. Open several hours before I tasted. Both fresh and baked apple aromas with spice, mint and great richness that can only come from a ripe vintage. But the balance enables this to come across as rich without seeming extremely ripe. Identical flavors. Super length. Excellent wine, thanks for sharing, Jeremy.

From magnum. Sensational. Strong spearmint on the nose, gives way to savory, almost umami quality (hard to describe). Lively mouth, with tropical fruit notes. A certain austerity on the finish, but from opening everything was there.

Spectacular bottle in great condition from Crush. Color showed like a young white burgundy. Finish and minerality were deep. This is white burg at its best. Well preserved bottles seem to have plenty of life left.

Markedly better bottle than last December, this wine had the flowery qualities of a good Bienvenue but also the power that you usually associate with Batard. Full mature and no sign of fading (NoMAD)

Given the age this is impressively fresh, rich and showing nice minerality. On the palate this has amazing density and profound intensity but it fades pretty quickly. Showing its age quickly.

opened, enjoyed over 2 hrs--Med yellow green color; initial nose of asian spices, strong oregano, then fading to light cumin and tarragon; extremely complex, kaleidoscope like movement of flavors centered around tarragon,rosemary, oregano, a little mint and tangerine-- i.e. COMPLEX body light, follows the nose aroma's but not much added by the palate- this is a wine based on smell, not taste. Nice full body, med long finish on the rosemary/minty side; balanced, complex, not fading yet; drink again 3-5yrs.

A pristine looking bottle bought on release from the Domaine.
Colour: Light green/ gold. Very youthful. Looks 3 years old, not 20.
Nose: At first very closed, showing only a lemony, salty minerality. With some air, a hint of butter and mint. Extremely fresh with very little sign of age. I doubt I would ever guess this to be an '89 if given blind.
Palate: Much more Ramonet than 1989. No blowsiness, no flab. At first almost mouth-puckering acidity and bite. After 30 minutes it mellows somewhat but is still tight as a drum. Eventually there's apples, pears and woodsmoke, all tinged with popcorn. A great-mineral driven Grand Cru. Had he been making Chevalier in '89, I doubt it would very dissimilar to this, and certainly no better.
I always tend to overlook buying Ramonet's BBM, favouring his Monty, Batard and now the Chevalier. Whenever I drink one though, I regret not having had better judgement in my younger days.

Tasting at Ramonet (2004, 2003 and others) (Ramonet cellars): Incredibly oxydised, the worst oxydised bottle I have ever had in my life. Smelled putrid and the mouth was even worse. Completely undrinkable. Showing the same light-blue, slightly dusty tinge than the 95 BBM but only deeper (about half a centimeter). In my opinion the difference between the 89 and the 95 was simply 6 years - basically the 95 we had would taste exactly like that 6 more years down the road.

Another lovely bottle. It was just a little past peak maturity but still tasted great with its lemon, light toffee, white stone, and apple flavors.
In the mouth, the acidity was light at first but firmed up and became gorgeously integrated with the fruit.
This bottle was in perfect condition so drink up ASAP.
