Excellent manzanilla, maybe my favorite. Very fresh nose of green apple with a distinct marine quality. Wonderful salinity on the palate with good acid balance, medium texture, palate has almonds, seaweed, more fruit. Long finish. This is what it’s all about.

Light golden yellow, medium-full body. Immense nose: sea brine, cashew box, dried yellow currants, freshly sawn oak. Bone dry, with sharp, strong, non-volatile acidity that is very refreshing, reminiscent on the palate of lemons, though no such aroma is present. A surprisingly strong, but not unbalanced and very smooth tannic structure and a slightly intrusive, bitter flavor of American oak on the mid to back palate is again immense; this is not a wine for the weak. Bitter tannins, and possibly a touch of brett or some other musty, corkish taint - not TCA - dominate the long finish; it's the same stiff bitterness you get out of a young, strongly cured green olive and it is so strong it is felt on the middle back of the tongue. A very pleasant marine salinity is present throughout and it is after it dissipates that the bitterness becomes most pronounced.
Held up to a Cuban cigar, HdM Epicure No. 2; the pairing may be a bit surprising, though the lady on the label is a cigar salesperson, but the strength and acidity were enough to fully refresh the palate between puffs, while pairing nicely with the somewhat sauvage flavors of the young Cuban tobacco.

Very pale, light, delicate, a bit salty-saline with raw almond note; high acidity, crisp; drink very cool, but is nice a bit warmed up as well. good with grilled prawns, more neutral hard and semi hard cheeses. Excellent fino. Unexpectedly superb pairing with a very, very picante room-temp (leftovers) camarones a la mexicana with some avocado - it felt like the oxidative character (which had grown a bit; this was the latter half of the bottle, about a week after opening) helped this work with the chile heat, refreshing rather than fanning the flames; it also kind of echoed the avocado's flavor/texture.

Nose: Green apple cider, wax, and faint smoke, with hints of cheese rind and dust. There's also yeast and old wood influence, as well as saline and a bit of rancio.
Mouthfeel: Light to medium bodied and assertive.
Palate: Yeasty and savory but subtle, with hints of lemon, green apple, and bitter orange, saltwater, damp wood, almond, and capers. The finish is dry, crisp, clean, and tangy, but not overlong.
Bracing and very appetizing, and it persuades with its balance and authenticity.

Four month old bottle, very very delicate upon opening, light on the palate, fine but not thrilling, classic saline profile. Puts on weight as the day goes on, rather varnishy by the next day, though still very good, and more intense.

The finish of this goes on for a very long time. That might be common with Sherry. I haven't drunk enough to know. As a prior note said, it is a little chalky, and the alcohol is definitely there. Nice nuttiness, more than a trace of iodine, and perhaps a tad too much of green apples up front. But on the whole there is a lot of complexity and richness for the price. A lot more subtle and complex as it warms up a little. Couldn't drink this all the time, and couldn't drink too much at one time (sharing a 375 ml bottle and that is enough), but I would definitely drink this again.

Moderate brown-gold. It took a couple of tries to get a grip on this wine, I never did enjoy the first bottle, and this one required two days open in the refrigerator. At first I found it musky, awkwardly tart and somehow unbalanced. After this airing, the nose shows some sea, varnish and overripe pears. The palate is light, as a Manzanilla, but the flavors lean towards Amontillado, some roasted nuts and caramel on top of clear SanLucar vinosity. The finish is mouthwatering and similarly inclined, relatively full and savory. Clearly more developed than most other Manzanillas I have tried, and more full-bodied.

Subtly briny manzanilla aroma with a sweetness on the nose that makes the crisp dryness on the palate surprising. Lightly nutty, a fine, complex sherry in the manzanilla pasada style, just a tad richer than other manzanillas. Long, long finish, fantastic with jamon, almonds, cheese, crudo.

en Rama(un filtered) The wine is light pale gold and with a very light haze. Nose off honey, white flowers, almond and light melon. The palate gives a creamy dry sensation with salt, light vanillla, wood, and almond. Overall very soft in the mouth with a refreshing finish that lingers. Very enjoyable. alt=3.5

Hard to judge since this is the first bottle of amantillado I’ve had.
The nose has plenty of salt and brine, a little citrus and chamomile.
The palate has the same salt and brine with raw nuts and olive. There’s a hint of citrus at the front that dissipates quickly. Short finish

Sería una saca de 2013.
Fina, sutil, muy floral, manzanilla y retama.
Mineral y caliza, frutos secos pero con una gran frescura.
Nariz, compleja, perfiladísima y con diferentes capas. Tremenda.
La boca explota, muy redonda, glícerica. Quiero imaginar como estaría esta botella en dos años.
Aceite, sal y pimienta.
Es la primera vez que la probaba y me ha encantado. Un vinazo.
Media botella por unos 6 euros, hay que pillar más.
