For all their “exotic” wines, this is right down the middle, though far more buzzy and crisp than commercial Champagne-like-substances. This one’s 60% ’08 and 40% last year’s blend; 50%PM/25%CH/25%PN, disgorged 2/11, and true to its modern form, incisive and crackery, rye rusks and oysters – which in fact this wine partners quite well!
