(NV Jacques Selosse "Substance") This is unique, in that it is 14 different vintages that are added in the casks along the years. A "solera" style Champagne if you will. This had even finer mousse than the regular Blanc de Blancs. Finely etched stuff this was. Yes . . .Selosse does make me talk like Yoda! The nose had hazeluts, iodine (Chevalier Montrachet?) and some apple again. Bracingly mineral with immense concentration and power but on such a heartbreakingly lithe frame it was incredible. Again this took over your mouth and left you sucking, sapping and licking the inside for what seemed like forever. Baking spices developed after some time in the glass. This was the most "open" of the three bottles I have had this year. Just amazing wine.
(NV Jacques Selosse "Substance") The wine was amazing, plain and simple. Initially the nose was all saline, pralines and minerals with some piquant tangerine fruit on the nose. The palate had absolutely mindboggling levels of concentrated bright citrus fruits on the sleekest lithest frame you can imagine. It danced, prickled and tickled your palate and the mid-palate definition was nothing short of brilliant. It was one of those special wines that kept changing every time I sipped it our held it up to my nose. The minerality was dense, concentrated and beautifully complemented all the fruit. There was alot of fruit in this. More than I expected. The finish was long and mineral and delineated like the best bubblies I have had. Kept opening and getting deeper and more complex as the night went on. The last sip was the best. An incredible experience.
(NV Jacques Selosse “Substance") I have been extremely fortunate to enjoy this wine twice in the last three months and it has been a glorious experience each time. Last night was no exception. This bottle showed a bit more open and expansive than the bottle enjoyed at Blue Fin. Aromas ranged from ginger, caramel, toast, hay, yeast, lemon to mineral, wet earth and dried peach skin. Again this was a confluence of the aromas that developed the many hours it was open. The palate had sap, incredible delineation and purity along with rich intense flavors of toast, stone fruits, apple skins, spice and earth. The acidity was tight and perfectly integrated with the fruit, mousse, oak and minerality. This was an incredible bottle of Champagne that kept getting better and better as it opened up. Brilliant stuff and something that I would not hesitate to decant as this was so incredibly vinous that you barely notice the bubbles are there.
