Domaine Pichat started small. Very small, in fact. The family farmed their ancestral two hectares for many years without offering their own wines, but that all changed when they finally sold 900 bottles of the 2000 vintage. Now composed of 5 hectares of vineyards in the crus of Champon, Cognet, Plomb, Fongeant, Gerine, and Grandes Places in Côte-Rôtie and La Caille for Condrieu, Domaine Pichat sells little more than 20,000 bottles a year. Each parcel is farmed according to the unique needs of its terroir, with the sole purpose being to produce healthy and ripe grapes expressive of their location. Domaine Pichat does not use pesticides, and selects all of their vineyard treatments carefully and with respect to the land.

The winery is equipped with thermo-controlled stainless steel vats for vinification and 400L oak barrels of varying ages for the maturing process, thus combining modern and traditional fermentation techniques. They are replaced at different rates depending on the precise characteristics of each cuvée. The Côte-Rôtie "Champon's" from brown schist soil is aged 24 months in 30 to 40% of new barrels while the Condrieu from sand and alluvial silt is aged 9 to 12 months in up to 30% new barrels.
