2008 Quivet Cellars Cabernet Sauvignon - Spring Mountain District , Napa Valley - $65 (98 cases produced)
Our mountaintop vineyard in Napa’s acclaimed Spring Mountain District took full advantage of the even growing season in 2008. With the lack of irrigation water due to the prolonged drought, it was just what the doctor ordered to achieve the hang time needed to perfectly ripen out clone 7 old vine Cabernet Sauvignon. Like its predecessors, the entry on this wine screams its appellation, exploding in the glass with dark brooding fruits, minerality and dried herbs. The palate is powerful and subtle at the same time. Ripe mountain fruit across the dark spectrum are married with tannins that are large scaled but subdued from minimal extraction in the fermentation process. Delicious now, this wine should blossom and be stunning in 4-8 years.
