Savagnin (Wikipedia)

Savagnin is the local grape variety responsible for the great Vin Jaune and the Savagnin for this cuvée is also aged “sous voile” but is bottled three to four years after harvest. This Savagnin is a severe wine with exceptional grace and power that takes sometime to reveal itself. On initial embrace, the wine may reveal typical white Jura hints with its sherry nose of almonds and petroluem. But upon further inspection there is a lot more going on when it starts to open up with a fresh, autumn apple essence compounded by sleek and ethereal minerals. In the mouth it is round and golden with almost a white Burgundy texture that is succulent and gaping on the palate. Definitely not a wine for the weak of heart. It is serious and all encompassing that literally takes one over in every way.
