From the Aubert 2012 Aubert Lauren Estate Vineyard Sonoma Coast Chardonnay Tasting Notes
With each vintage we see greater potential at our Lauren Estate. The 2012 Lauren reveals our definition of perfection, as well as a new found degree of complexity in this wine. Our family is very proud to own this estate, and we feel an immense sense of accomplishment in 2012 as this wine is our finest attempt to date.
The Lauren Estate is comprised of four distinct Chardonnay clones. Each clonal block was harvested at a level of profound complexity. As with all of our vineyards, the grapes were handpicked at night and immediately transported to the winery, where after only a mere 8 hours the fresh Chardonnay juice was in barrel. Fermentation was conducted in barrel and took a lengthy seven months to complete. Blended only before the final racking to bottle, each lot is scrutinized and evaluated. Only the most complex lots go into our final blend. Lauren is aged in 100% new French oak barrels for 12 months, and then carefully racked to tank for three months to clarify and concentrate before bottling.
