Winemaking: 2012 brought a warm summer growing season with moderate temperatures offered ideal conditions for our Pinot Noir. Grapes were harvested mid-September showing smooth tannins, deep color and higher concentration of aromas and flavors than the past cooler vintages. The fruit was crushed and cold soaked for seven days. Fermentation took place in small stainless steel tanks. Three pump-overs were performed daily for maximum color and flavor extraction. The round, full and polished texture of this wine comes not only from the high quality fruit but also judicious use of oak—the wine was aged for 8 months in small French oak barrels with 20% new oak.
