“100% C.S. from a S-facing Vyd planted in 1973 to weak, loamy sand & gravel soils with low-water holding capacity; Ripe grapes were destemmed & sorted with a new cutting-edge grape receiving & sorting system designed to gently remove any green material from the grapes. Daily gentle pumpovers with frequent airative racking during barrel aging & prolonged malolactic fermentation in barrels; Aged for 21 mos in AM & FR oak barrels (77% new); 14.5% ABV, 0.55g/100 ml T.A., & 3.80 pH; 13,500 cases produced.”
