“100% C.S. harvested from high elevation vyds, some > 40+ years old, with soils ranging from poor volcanic deposits to ancient seabed; Fermented in a combination of cement vat fermenters, open-top foudre, & s/s. After ≈2 wks on skins, we gently press & age 32 mos in neutral oak: 20 mos in large format foudre, & 12 mos in barrique, ff’d by 12 addt’l mos of bottle age before release. 14.25% ABV;”
