“100% de-stemmed P.N. which is a blend of 5 vyds & several clones. Harvested & vinified in small lots to retain the subtle differences between each of the vyds; After a 5-day cold soak, native yeasts initiated the fermentation, which lasted 10-14 days in open-top fermenters. After a gentle pressing, the wines were barreled down for 11 mos of ageing in FR oak cooperage (50% new). 14.2% ABV, 6.0 g/L T.A., & 3.65 pH; 775 cases produced & released Fall ’17 @ $42.”
