“100% C.S. from the Finca San Pablo Vyd @ 1,350m asl; Pre-fermentation maceration for 5 days at 8°C. Alcoholic fermentation takes place in stainless steel tanks for approximately 14 days at 28°C, with a subsequent maceration of 16 days. 100% malolactic fermentation; 13.90% ABV; 2.27 g/l R.S., 5.17 g/l T.A., & 3.73 pH.”
