Variety
Coonawarra Cabernet Sauvignon
Vintage Conditions 2017
A cool growing season with late season rain led to red-fruit and spice notes in the 2017 wines. Small quantities of good quality wines were made from 2017. At Wynns, we are fortunate to have a significant area of prime Terra Rossa vineyards and we could judiciously pick for quality.

Wine Analysis
Alcohol 13.4%
pH / Acidity / Residual Sugar 3.61pH/6.0/dry (0.5g/L)

Peak Duration
Enjoy on release, or cellar carefully until 2037
Maturation
12 months in French hogsheads, barriques and vats.
New French hogsheads and barriques 25%; 1*3yo hogsheads and barriques 60%; vats 15%

Tasting note
Colour Deep garnet red.
Nose Lifted Cabernet perfume which includes dried leaf, black olive and dark cherry.
Palate Approachable and fine, yet the Black Label pedigree is apparent with persistent dark cherry fruit and fine tannins.

Perfect Pairing
Thai style BBQ jumbo prawns with sticky rice.
Why?
2017 gave us spicier Cabernet Sauvignon flavours which are complementary to the smoky BBQ notes. Black Label Cabernet with sticky rice is a personal favourite
