“L’Ecole No. 41 is a partner in the 170 acre acclaimed Seven Hills Vyd, which is planted in wind-blown loess of geologically young and mineral rich soils. Originally planted in 1981, this Certified Sustainable and Salmon Safe vineyard was recognized as one of the Ten Great Vineyards of the World by Wine & Spirits Magazine.

“50% ea S.B. & Sémillon harvested 9/12-13/2019 @ 23.8° ave Brix. The grapes were harvested in the cool, early morning hours and promptly delivered to the winery for immediate pressing. The fruit was whole-cluster pressed to tank and allowed to settle. The juice was racked to neutral FR oak barrels where it completed a slow, steady primary fermentation & 100% malolactic. The wine aged sur lie 4 months in tight-grained FR oak barrels & then transferred to stainless steel tank for finishing. 14% ABV, 2 g/L R.S., 6.7 g/L T.A., & 3.38 pH; 1,450 cases produced & bottled 5/28/2020, released Oct ’20 @ $21.00 sugg retail.”
