Comments from Jared Lee assistant Winemaker from Pear Valley:

We are located off 46E, on Union Rd. Basically Union is a large loop consisting of many wineries and vineyards. We strive for balance in our wines mainly while trying to always stay true to the varietal character. These Syrah's are 100% syrah.

We actually produce a LOT of varietals. We have more and more coming on-line. Some obscure ones are Aglianico, Charbono, Albario, Tinto Cao, Touriga Nacional, and Tinta Roriz. The last 3 are for traditional Portuguese varietals for our fortified wines, due out in a few years.

We have two vineyards, one on Union with the tasting room and production facility, the other in San Miguel, just north of us. We are all estate, meaning we source no outside fruit. Out location provides excellent sun exposure, and we do experience a cooling breeze in the late afternoon. Because we have complete control of our vineyards, we have a hand at shaping the harvest. Canopy management and crop thinning are essential to our quality control.

The classic Rhone and Bordeaux varieties are driving the train. It has been well demonstrated what Paso can do with Grenache, Syrah, Mourvede, Cinsault, etc...

Our location allows us to reach physiological ripeness fairly easily, so we are not usually hanging our syrah waiting for sugars. So, our Syrah tends to not have overripe, jammy, characeristics. To me Syrah can display so many personalities. From super old-world earth and gameyness, to sweet fruit bombs. We shoot for a nice mix of blue and red fruits, slight Syrah "funkyness", and complimenting oak.
