2007 Copain Syrah Tous Ensemble

* This is our first blended syrah consisting of fruit from Alder Springs, Eaglepoint Ranch, Hawks Butte and McDowell Valley vineyards. All the fruit was fermented with 30-50% wholecluster and barrel aged in 15% new french oak. The wine was lightly egg white fined and bottled unfiltered. Copain's appellation program is dedicated to producing top-quality wines which represent a blend from some of the best vineyards in the appellation. All of our vineyards are organically farmed. We produce our wines with the goal of being varietally correct, lower in alcohol and most importantly, food friendly.
* Tasting Notes: Great comlexity on the nose and palate with black currant, black rasberry, pepper, dark chocolate and subtle smokey notes that are all well intergrated. Medium bodied with well balanced flavors, supple chalky tannins, good structure and long finish. Ready to drink now, but another year in bottle will help meld the flavors even more. We suggest a brief decanting prior to serving. This Syrah should cellar quite nicely over the next five years.
